Immune boost recipe

I learnt this recipe from my parents. It consists of a few very simple ingredients and I love its serving versatility and benefits.

Ingredients:

  • juice from 2 lemons

  • piece of fresh ginger (around 5 cm)

  • honey (or another sweetener to taste)

Step by step:

  1. Peel the ginger with a teaspoon

  2. Chop the ginger into smaller pieces and put them in a blender together with lemon juice and honey (or any other sweetener if preferred).

  3. Blitz until runny paste forms

Storage:

Store in a closed jar in a fridge for a few days. Ideally glass or metal, not plastic.

What to do with scraps:

If you used unwaxed lemons, use them in lemon water! Chop up the lemons into smaller pieces and pop them in a jug of water to flavour it.

You can also use lemon zest in your cooking. Just finely grate the zest directly into your cake or biscuits mix or add to your salad dressing,

Ways to consume the immune boost:

  • a teaspoon of the paste straight up! (for the brave ones)

  • teaspoon over your porridge or yoghurt

  • put a teaspoon in a cup and pour over some hot water (not completely boiling as you don't want to completely get rid of all the goodness)

  • a teaspoon in 50ml of lukewarm water as a shot

  • a couple of teaspoons added to a winter salad dressing

  • a couple of teaspoons to stir fry with your veggies

The beauty of this recipe is the joy of experimenting. Make it work for you. This is just a baseline recipe. Make it your own. If you feel up for it, you can add some turmeric to the blend, lime or cinnamon. Enjoy and let me know what you think!

Keep well,
